Imperfect Foods Haul #5

So, as usual, I don't get anything for this, I'm not sponsored by Imperfect Foods, and this comes out of my own pocket.
I need to eat, and I'm a big fan of reducing food waste, so this works for me. Also in a time of social-distancing, this is a great way to avoid the supermarket. So a big thanks to the folks over there and the delivery drivers who make this possible. You're the real heros.

Lots of veggies this week. They warned that there may be delays or shortages, but the only thing I ran into was that I could only get one pack of Beyond Burgers, when I wanted to grab two. My box actually arrived earlier in the day than usual, but my guess is the routes were adjusted because of a spike in demand.

Anyway, this week's loadout:

  • 2 lbs of onions, I upped this after using whole bunch last week. Also, I'm working from home and I use a lot of them in recipe development.
  • 2 Mangoes
  • 4 bell peppers
  • 4 small squash
  • a few leaves of kale
  • 2 pears
  • 5 large carrots. Like ridiculously large and heavy
  • The largest sweet potato I've ever seen.
  • A bunch of undersized citrus, which is fine because I cut them up and put them in my water.
  • Beyond Burgers (also not a sponsor, but I'd be ok with that, too.)
  • a bag of lentils, since I've been making soup like a madman lately.
  • More smoked salmon, which I just eat as a snack.
  • And Pho broth. It's one of those things I've never really nailed down, so when I see it, I tend to pick it up.

I'm on work-from-home until the end of the month. So I've been cooking up a lot more than even I usually do. So expect a lot more recipes these next few weeks.
