Cool Ranch Chicken Benedict

In January 2022, I participated in the first Holbrook Public Library Chopped Challenge. For full disclosure, my girlfriend is the Library Director there, so I was mostly doing it to make sure they had at least one participant, and I wasn't allowed to win. I was ok with that.

Each participant was given a mystery ingredient bag containing one fun size bag of Coll Ranch Doritos, One beef jerky stick, and two cups of honey mustard dipping sauce.
Additionally they could use anything in their "pantry" which is basically anything you can find at the store.

I got my bag on Thursday and had to have the recipe and video turned in by Monday at noon, so it was a short turnaround. Everyone else had a whole week.

The Recipe:

To start with I made a basic flour breading, using the Doritos for the outer layer. This consisted of a pass of flour, then eggs, then the crushed up chips. This then went into my air fryer to cook at 360oF for 14 minutes. Initially I ran it for 12, but it wasn't all the way up to the temperature I wanted (180oF since I was using chicken thighs), so I gave it two more minutes.

For the Hollandaise, I just whisked two egg yolks over a double boiler until they were silky then added all of the honey mustard and kept whisking, making sure not to make scrambled egggs.

The candied jerky was just brown sugar and low heat in a pan.

  • Cool Ranch Doritos (supplied)
  • Beef jerky stick (supplied)
  • Honey Mustard dressing (supplied)
  • 4 Eggs
    • 2 yolks for the sauce
    • Combine remainder for the egg wash
  • 1 cup of All Purpose Flour
  • 2 Tablespoons of brown sugar
  • 2 Frozen Waffles, toasted

It was pretty tasty. If I were to serve this as a breakfast or brunch item, I'd definitely have some maple syrup around for the waffles, they were a little dry without it. The green Tabasco (Jalapeno instead of Cayenne) helps pop the cool ranch flavor that flashes off a little in the air fryer.
