Semi-Scratch: Loaded Mac and Cheese

Feeds 3-4

Ingredients:

Prepared Mac and Cheese (blue box, deli, etc.)

Onions - 1 medium per person

Red Peppers - 1 large per 3 people, roundup

Bacon - 2 slices per person

Parsley - As needed

Shredded Cheese - As Needed


Preparation:

  1. Chop the bacon into ¼” wide strips.

  2. Render the bacon down.

  3. Dice the onions and peppers.

  4. Sauté the onions and peppers in the bacon fat until the onions just start to brown.

  5. If necessary, prepare the mac and cheese per the instructions.

  6. Combine the bacon and vegetables with the mac and cheese, and stir well.

  7. Top with Parsley.
